Pure Pork Awesomeness Chef Kevin Gillespie has received many accolades in the past several years. He has been named a semifinalist for the James Beard Foundation's Rising Star Chef of the Year Award for three consecutive years, was nominated for Food & Wine's People's Best New Chef and named to Forbes' 30 Under 30 for his outstanding accomplishments in the restaurant industry, and his first cookbook was nominated for a James Beard award.

His sophomore cookbook, Pure Pork Awesomeness, is all about one of his favorite subjects: the pig, and we're delighted to offer five copies to EYB Members in the US and Canada. I don't cook pork at home very much at all - or any meat for that matter. I leave it to the professionals. I love really good pulled pork, pork tenderloin, charcuterie and bacon!

I like pork shoulder, which remains moist after cooking. I make a charcoal fire on half the grill, brown a boneless shoulder roast directly over the coals, insert a meat thermometer, cover the grill with the vents open, and charcoal roast to 135 Fahrenheit. Let rest to 145 degrees.

Ribs are my favorite. If we have time, we cook them sous vide and finish them on the grill. Otherwise they get roasted in the oven. Either way, they get our fantastic spice rub!

I am mostly enjoying pork shoulder, an inexpensive cut that can be cooked many ways: barbecued, roasted, cut up and stewed. Not to mention the dishes leftovers can be used in ( for example, tacos)

I love taking the pork tenderloin; butterflying it; then layering it with Rosscarbery Black Pudding. Roll it up on the narrow side, secure with 2 cocktail sticks. Wrap in tin foil and roast for 25 minutes per pound + 25 minutes at 180°C (calculate the cooking time on the weight of the tenderloin only). Open one end of the pack and pour the meat juice into a saucepan. Add some red wine and a little seasoning. Reduce. Pour the sauce over the sliced stuffed pork tenderloin. Serve with potatoes & veg; alternatively let it cool & slice wafer thin to serve as a salad meat. Enjoy

I love any pork cut that I can braise until it falls apart, such as country style ribs, butt, or shoulder. And, of course, bacon! But for the life of me, I cannot seem to get the hang of roasting or grilling pork without drying it out.

Shin cutlets..... amazing cut that I only know since I buy whole pigs these days. A light dusting in some panko crumbs and a quick pan fry. Serve with a lemon butter sauce and life seems better almost immediately.
