I'm sure there are some cooks who shy away from books that feature the cuisine of other countries. They may think it would be hard to find certain ingredients or the palates of their family might not appreciate the dishes contained in these books. We have Ottolenghi to thank for bringing a generation of people to the Middle Eastern table.

Sumac contains recipes that are relatable and approachable including Ashta - Syrian-style ricotta cheese; Toasted sandwiches with spicy meat and cheese; Sabankh bil roz - stew of spinach and ground beef and Walnut baklava. I had to look through the book three times to find a recipe that would be out of my comfort zone and could not find one. Embrace the cuisine of other countries and open yourself up to a world of flavor.
